Ingredients for Soup:
- 4 medium heads garlic
- ¼ cup Garlic Gold® Oil
- 6 cups chicken or vegetable stock
- 2 cups water
- 2 Parmesan cheese or other hard cheese rinds, each about 6 inches long
- 2 bay leaves
Ingredients for Garnish:
- ½ cup to 1 cup grated Parmesan or other hard cheese
- Freshly ground black pepper and sea salt
- Garlic Gold® Nuggets
Separate the cloves from the heads of garlic; do not peel. Place garlic cloves inside a large ziplock style plastic bag. Using a meat mallet, a hammer, or a rolling pin, mash the cloves into little pieces.
Toss the smashed garlic (peel and all) in a small saucepan along with the Garlic Gold® Oil and 1 cup chicken stock. Simmer over low heat, stirring frequently. Cook until the garlic is soft, about 35 minutes.
Meanwhile, in a large soup kettle, bring remaining chicken stock, water, Parmesan rinds, and bay leaves to a boil over high heat. Turn down to medium and simmer for 30 minutes. Add the simmered smashed garlic mixture to this. Allow to gently boil for 15 minutes.
Place a sieve or a chinois over a large bowl and carefully ladle simmered mixture into sieve. Push down with wooden spoon to extract all the liquid. Return strained broth to saucepan and season with sea salt and freshly ground pepper to taste.
Ladle into bowls; serve with additional garnishes.
