- 1 plain or hot Italian sausage, casing removed
- 1 small, diced red bell pepper
- 2 Cups (or handfuls) washed spinach
- 2-4 Tablespoons Garlic Gold® Oil
- 4 eggs
- 2 Tablespoons water
- ½ Cup shredded Mozzarella cheese
- 1 Minced jalapeno (optional)
- Garlic Gold® Parmesan Nuggets
Pre-heat your broiler.
Crumble the sausage and cook 3-5 minutes until browned in a small skillet with 1-2 Tablespoons Garlic Gold® Oil. Remove cooked sausage from pan, reserve. Add one additional Tablespoon Garlic Gold® Oil to same pan – brown peppers and jalapenos, then add the spinach. Cover the pan and turn off the heat to allow the spinach to wilt.
Beat 4 eggs with 2 Tablespoons water and a pinch of sea salt. Heat a 10” broiler-proof skillet (prefer cast iron), and coat lightly with 1 Tablespoon Garlic Gold® Oil. When pan is hot, pour the beaten eggs in. Sprinkle the cooked sausage, peppers and spinach over the top of the eggs. Top with Mozzarella cheese and several shakes of Garlic Gold® Parmesan Nuggets. When edges start to brown, remove the pan from the burner and put in a hot broiler for 1-2 minutes. (Keep an eye on it – depending on your broiler heat this can cook quickly!) The fritatta will turn golden brown and puff up. Remove from the broiler, slice, and serve immediately with additional Garlic Gold® Parmesan Nuggets
