Ingredients:
- 4 large red potatoes
- 1/2 cup sour cream
- 4 finely chopped chipotle peppers in adobo sauce
- 2 teaspoons Garlic Gold (Nuggets in Oil)
- Salt & Pepper to taste
Directions:
- Boil potatoes for 30 minutes (or until fork tender).
- While potatoes are boiling, add sour cream, chopped pepper, and Garlic Gold to a mixing bowl.
- Once potatoes are done, coarsely chop them and add to the mixing bowl.
- Use a mixer to blend the potatoes to a smooth/whipped consistency.
- Add salt and pepper to taste if need be.
