Garlic Gold® Quinoa Salad With Spicy Pistachios and Lime Dressing

Ingredients:

For salad:

  • 1 cup quinoa, preferably black quinoa if available
  • 1½ cups water
  • 1 teaspoon sea salt
  • 1 cup shelled pistachios
  • 1 tablespoon
  • Garlic Gold® Oil
  • 1 teaspoon chili powder
  • 1 tablespoon maple syrup, preferably grade A
  • 1 green onion, tops only, thinly sliced

For dressing:

  • Juice from 1 fresh lime
  • 3 tablespoons
  • Garlic Gold® (nuggets in oil)
  • Pinch sea salt to taste
  • 1-2 tablespoons maple syrup, preferably grade A

Rinse quinoa thoroughly in small fine-meshed sieve. Transfer to medium heavy-bottomed saucepan with tight fitting lid. Add water and ½ teaspoon sea salt to the quinoa. Turn stove on medium and heat until water comes to a boil, stirring frequently. Turn heat down to low and cover and cook until quinoa is soft, about 15 minutes. Remove from heat and let stand, covered.

Preheat oven to 325 degrees. Combine ½ teaspoon sea salt and chili powder in one medium sized bowl. Set aside. Combine the maple syrup and Garlic Gold® Oil in another medium sized bowl. Set aside. Toss pistachios with maple syrup and Garlic Gold® Oil mixture, then with sea salt and chili powder mixture, and place on cookie sheet with rims. Roast about 7 minutes, stirring frequently, until pistachios are toasted. Remove from oven immediately and place toasted pistachios in bowl or on another cookie sheet with rims so they will not continue cooking.

Combine dressing ingredients; toss with cooked quinoa. Add green onion and garnish with toasted pistachios.

Serves 4-6

Helpful Hints:

  • Instead of toasting the pistachios in all the spices and what not, just add them to the salad raw on their own. Or you can use almonds. Whatever nuts you have handy (no, this does not include family members). Cook the quinoa—-so quick and easy really, then add a little Garlic Gold® (nuggets in oil), a little lemon or lime juice, nuts, and you are done. Don’t have a lemon or lime handy? Any acidic ingredient will work, like a white wine vinegar, for example.
