Garlic Gold® Chunky Marinara Sauce:
- 12 medium sized fresh ripe tomatoes
- 3 tablespoons Garlic Gold® Oil
- 1 medium yellow onion, diced in to ¼ inch dice
- 2 teaspoons Garlic Gold® Italian Herb Nuggets
- ¼ Cup dry red wine
- Additional Garlic Gold® Sea Salt Nuggets and freshly ground pepper to taste
Heat a large pot of water to boiling and boil tomatoes 1-2 minutes, or until skins loosen. As skins loosen, remove each tomato with a slotted spoon and place in a large bowl. Allow to cool slightly and remove skins. Smash tomatoes with a potato masher until they resemble a chunky style soup in texture.
Heat the Garlic Gold® Oil in a large heavy-bottomed 12 inch skillet on medium for 2 minutes; add the diced onion. Cook for 5-6 minutes, until slightly softened and fragrant. Add the smashed tomatoes and Garlic Gold® Italian Herb Nuggets.
Cook, stirring constantly, for 10 minutes until thickened, making sure to scrape any bits from the side so as not to burn.
Add the wine and stir and cook one additional minute. Remove from heat and adjust the seasonings, adding additional Garlic Gold® Sea Salt Nuggets and freshly ground pepper to taste.
The sauce can also be frozen once cooled, and will keep for up to 6 months frozen.
Makes 3 ½ to 4 Cups sauce. Serve on pasta, fish, shrimp, clams, steak or braised chicken.
Hot and Spicy Marinara: add one teaspoon hot red pepper flakes with the seasonings for a spicy marinara sauce.
Chunky Garlic Gold® Pizza: continue to cook the sauce, stirring constantly, until very thick like ketchup. Remove from heat and spread over your favorite store-bought pizza crust and bake with your favorite toppings, brushing the crust along the sides with additional Garlic Gold® Oil before baking.
