Garlic Gold® Buffalo Blues Salad

Ingredients:

For the dressing:

  • ¼ cup Garlic Gold® (nuggets in oil)
  • ¼ cup mayonnaise
  • 1 Tablespoon fresh lemon juice
  • 1 ounce blue cheese, crumbled
  • Garlic Gold® Sea Salt Nuggets and freshly ground pepper to taste

For the nuggets:

  • 1 pound pressed extra firm tofu, cut into 1 inch cubes and blotted with paper towels to remove moisture
  • ¼ cup hot sauce
  • 2 Tablespoons Garlic Gold® Oil
  • 1 Tablespoon maple syrup
  • 1/3 cup cornmeal
  • 1 Tablespoon organic cornstarch
  • Garlic Gold® Sea Salt Nuggets and freshly ground pepper to taste

For the salad:

  • 10 cups mixed baby greens (pre-washed salad mix works well here)
  • 6 radishes, scrubbed well and thinly sliced
  • 2 carrots, shredded

Preheat oven to 350 degrees. Combine all dressing ingredients with fork and mix well. Fold in crumbled blue cheese. Set aside.
Combine hot sauce, 1 Tablespoon of Garlic Gold® Oil, and the maple syrup in medium bowl. Mix well. Set aside. Combine cornstarch and cornmeal in another medium bowl. Set aside.

Take a large rimmed cookie sheet and grease it with the remaining 2 Tablespoons Garlic Gold® Oil to coat the pan evenly. Take each tofu nugget and roll first to coat in the wet mixture, then gently roll to coat all sides in the dry mixture. Place each coated tofu nugget on the oiled cookie sheet, leaving at least ½ inch of space between them. Bake the tofu nuggets until lightly browned, about 10 minutes. Remove from oven, place nuggets in large bowl, and pour the hot sauce mixture over them.

To assemble salad, toss the salad greens with the sliced radishes and shredded carrots to combine. Whisk the dressing ingredients to recombine. On each plate, put salad greens, the dressing, then the tofu nuggets tossed in hot sauce mixture. Serve immediately. Serves 4-6.

Helpful Hints:

  • They sell many frozen vegetarian buffalo style wings, nuggets, etc. These can come in quite handy when you are looking to cut labor. Just follow the directions on the package for baking them, but coat the cookie sheet with the 2 Tablespoons Garlic Gold® Oil so they have that wonderful roasted garlic flavor and aroma. Then voila, take some salad greens and your favorite bottled blue cheese dressing; put the veggie wings on top of that, garnish with some Garlic Gold® Nuggets, and you have a fabulous dinner salad worthy of the heartiest appetites in a jif!
