Back when we were first dating we used to make “Bruschetta Pasta” which was just tomatoes, goat cheese, olive oil, balsamic and basil tossed with pasta. Tonight’s was the grown up version of that.
Whole wheat rotini, cooked and cooled to room temp, topped with chopped red + yellow heirlooms, local goat cheese, a drizzle of Garlic Gold® olive oil, a tiny bit of balsamic, chopped oregano from our garden and sea salt.
