Ingredients:
- ¼ cup Garlic Gold® Oil 1 large onion diced into ½ inch dice
- 6 cups water
- ½ cup light miso paste, such as white miso or chickpea miso (more or less to taste)
- ½ cup water
- 4 medium red potatoes, diced into ½ inch dice
- ½ teaspoon sea salt
- 8 ounces your favorite smoky and/or spicy vegetarian sausage, chopped into ½ inch pieces
- 8 ounces kale, stems removed and leaves cut into strips
Additional:
- Garlic Gold® Sea Salt Nuggets
- Hot Sauce to taste, if desired
Heat Garlic Gold® Oil in a large stockpot on medium for several minutes. Add the diced onion and sauté until softened, about 5 minutes. Add 3 cups water, the diced potatoes, and the sea salt. Simmer until the potatoes are tender, about 10 minutes. Mash potatoes slightly with fork to thicken the water. Add the sausage pieces and kale and simmer an additional 15-20 minutes, until kale is tender. In a small bowl, whisk miso paste with water; add this to finished soup right before serving. Taste to adjust flavors and garnish with additional Garlic Gold® Sea Salt Nuggets and hot sauce, if desired.
