- 2 fresh (preferably organic) raw eggs
- 1/2 medium onion (sweet if possible)
- 4 tablespoons Garlic Gold® Oil
- 3-4 oz of Herb goat chevre
- 2-3 dashes of Spike Pepper to taste
- 1 medium avocado (optional)
- 1/2 cup Sun Dried Tomato
Whip eggs together with one tablespoon of water and combine with Spike and pepper.
Slice onions into thin slices and cook in pan over a medium-high flame. Sautee onions in the Garlic Gold® Oil until they begin to turn brown. Remove from pan leaving oil in pan to cook eggs. Pour egg mixture into pan while it is still hot and turn edges to insure a firm up turned edge to egg as it firms. Reduce to low heat. Place cooked onions on top of the egg mixture as an even layer. Add the chevre and Sun Dried Tomato in small pinches also evenly across the top of the onions.
As egg firms, turn one half of egg over the other leaving the onion and chevre mixture between the folds of the egg. Continue cooking, flipping to other side as appropriate (one time only) to insure through cooking throughout. The egg will have a firm golden brown crust and both sides at which time it should be removed and served on the plate.
If avocado is used, slice into thin strips and place in stripped pattern over egg, drizzle with additional 1-2 tablespoons of
Garlic Gold® Oil and sprinkle a little additional Spike on avocado-oil mixture to add color and snap to the taste.
