Pan-Seared Garlic Salmon Over Herbed Lentils With Greens

Ingredients:

For Salmon:
  • 2 salmon filets (about 6 ounces each)
  • 1 Tablespoon Garlic Gold® Oil
  • Freshly ground black pepper and sea salt
For Lentils: For Greens:
  • 1 small bunch swiss chard or kale, leaves only cut in small julienned strips
  • 1 small yellow onion, diced
  • 1 Tablespoon Garlic Gold® Oil
  • 1 sprig fresh rosemary

Instructions:

Heat  1 Tablespoon Garlic Gold® Oil in a large heavy bottomed skillet over medium heat. Add the onion and chard. Cook, stirring frequently, until the onion is softened and browned, about 3-4 minutes. Add the rosemary sprig.

Add Garlic Gold®, chicken broth, and lentils, stirring well. Reduce heat to low and simmer for 30-40 minutes until lentils are tender. Discard rosemary sprig. Season with Garlic Gold® Sea Salt Nuggets to taste. Set aside.

Pat the salmon dry with paper towels and season with sea salt and freshly ground pepper. Heat 1 Tablespoon Garlic Gold® Oil in a medium heavy-bottomed skillet on medium high heat and pan-sear the salmon filet until done, about 3 minutes on each side.

Serve the grilled salmon on top of the lentil-green mixture.
