Garlicky Grilled Potato Salad

You’ve got to try our fresh and breezy take on potato salad! We grill Yukon Gold potatoes with Garlic Gold® Oil, giving them beautiful grill marks and a kiss of smoky flavor. Next, they’re tossed with perfectly ripe tomatoes, sliced green onions, a handful of chopped parsley, along with a generous spoonful of our Sea Salt Nuggets. This flavor combination feels classic and new all at once — I hope you enjoy it as much as we did!

Ingredients:

  • 1 1/2 pounds medium-sized Yukon Gold potatoes (about 3” in diameter)
  • 1/4 cup Garlic Gold® Oil, divided
  • 1 pint sugar plum or cherry tomatoes, halved
  • 3 medium green onions, sliced thinly
  • 1/4 cup finely chopped flat leaf parsley
  • 1 heaping tablespoon Garlic Gold® Sea Salt Nuggets

Instructions:

  1. Steam the potatoes until they are cooked through, about 20 minutes. To test for doneness, poke the largest potato with a paring knife — you should be able to pierce it all the way to the center with just a little bit of resistance. Remove the potatoes from the heat and allow to cool to room temperature.
  2. Slice the potatoes in half lengthwise. Brush a tablespoon of the Garlic Gold® Oil onto the cut side of the potatoes.
  3. Place potatoes in a grill basket on an outdoor grill, or on a grill pan over medium heat on the stove. Let cook for about 8 minutes, rotating once, just until some nice grill marks appear.
  4. Remove the potatoes from the grill. Allow to cool for a few minutes, until comfortable to handle, then cut the potatoes into one-inch pieces and place back in the large mixing bowl.
  5. To the bowl, add the tomatoes, green onions, parsley, Garlic Gold Sea Salt® Nuggets, and the remaining 3 tablespoons of Garlic Gold Oil®. Toss gently to combine and serve.
