Chipotle Mashed Potatoes

Ingredients:

  • 4 large red potatoes
  • 1/2 cup sour cream
  • 4 finely chopped chipotle peppers in adobo sauce
  • 2 teaspoons Garlic Gold (Nuggets in Oil)
  • Salt & Pepper to taste

Instructions:

  1. Boil potatoes for 30 minutes (or until fork tender).
  2. While potatoes are boiling, add sour cream, chopped pepper, and Garlic Gold to a mixing bowl.
  3. Once potatoes are done, coarsely chop them and add to the mixing bowl.
  4. Use a mixer to blend the potatoes to a smooth/whipped consistency.
  5. Add salt and pepper to taste if need be.
