This salad couldn’t be simpler to make. Slice up some oranges, toast a handful of walnuts, and that’s all the advance preparation required! The oranges are served on a bed of spinach and arugula, with plenty of Meyer Lemon Vinaigrette drizzled on top. This is a great dinner salad any night, but it’s pretty enough to serve for a special occasion. Use one variety of oranges, or a few different kinds for a gorgeous ombré effect!Print
Winter Citrus Salad

- 4 cups baby spinach
- 4 cups arugula
- 6 oranges, peeled and sliced into thin rounds
- ¼ cup Garlic Gold® Meyer Lemon Vinaigrette
- ¼ cup chopped walnuts, toasted
- 1 sprig parsley leaves
- Spread out the spinach and arugula on a serving platter or on individual plates. Layer the oranges on top of the greens. Drizzle the oranges with the Meyer Lemon Vinaigrette. Sprinkle with chopped walnuts and parsley, and serve.
